The red meat skirt steak is a cut that is obtained from the inside part of the lower ribs of the cow. Also known as “cow’s roast”, has a long figure and tends to present a very long triangle shape as one of its ends is wider than the other.
The skirt steak is an almost unknown product in Spain, although very popular in countries with a grilling culture such as Argentina or Uruguay. Is considered one of the most special products in the selected meat cuts for grilling.
