Cabrales PDO cheese is a blue cheese made using artisan techniques with raw cow's, goat's and sheep's milk exclusively from Asturias farms controlled by the Protected Designation of Origin Regulatory Council. Creamy cut and intense flavour, slightly spicy. The secret of its great success lies in its maturing in natural caves in the Los Picos de Europa mountains.

The high humidity and temperature in the natural caves of Los Picos de Europa favour the development of the penicillium fungus, which makes it very creamy with a very intense flavour, becoming spicy when it reaches its maximum point of maturing.
Cabrales PDO cheese is a highly versatile cheese that can be served as a starter, used for making sauces, even served as a dessert.
