Authentic Spanish Afuega’l Pitu PDO cow’s cheese, white variety, is made from pasteurised cow’s milk in the centre of Asturias within the geographic area of the Afuega’l Pitu Protected Designation of Origin.

Lactic fermentation, salt and animal rennet is used in the production process in addition to the pasteurised milk produced from cows raised in conditions of semi-freedom in areas registered in the PDO.

The correct temperature for serving the cheese is room temperature. Therefore, the time taken to acclimatise the cheese is very important and varies depending on the size of the cheese. In the case of Afuega’l Pitu PDO white, cone-shape cheese, it is recommended to remove it from the refrigerator half an hour before serving.

PRODUCT PRESENTATION

Afuega’l Pitu PDO cone-shape, white cheese is vacuum packaged in pieces of approximately 300 g in a cone-shape mould.

Asturias Afuega’l Pitu PDO cow’s cheese has no crust, is white and has a compact cut that tends to fragment without breaking. It is very pleasant on the nose with fresh dairy nuances and medium intensity. The quality milk notes are presented with greater prominence as maturing progresses, which is at least sixty days.
On the palate, this cheese is clearly within the category of soft and pleasant cheeses, as with cheeses made from pasteurised cow’s milk with very short maturing times. However, the process of making Afuega’l Pitu cheese is distinctive, resulting in a grainy centre that is almost exclusive in this type of Asturias cheese.

The cone shape of this Asturias cheese is one of the visual features that help identify that it is made using traditional artisan methods by producers registered in the Afuega’l Pitu Protected Designation of Origin. In total, there are thirteen Asturias municipalities in which this pasteurised cow’s milk cheese is produced, and it also holds a leading position in Spanish cheeses overall.
