Remember that it is important to take the cheese out of the refrigerator about thirty minutes before serving, so that it is at room temperature. This will enhance all the delicate flavours and aromas.

Asunción goat’s milk cheese is a fairly elastic white paste cheese with a red rind, not very aromatic, although with a particular and pleasant flavour.
This Asturias cheese is cylindrical in shape, with a clean cut and clear caprine aromas characteristic of Asturias goat’s milk cheeses.
On the palate, fresh, dairy nuances are clearly identified, with caprine predominant.
