The Selección PDO Cabrales Cheese is an Asturias blue cheese made from raw cow's, sheep's and goat's milk from the geographical area of Asturias that is within the area covered by the Cabrales PDO regulatory municipality; the first protected designation of origin constituted in Asturias for a cheese. Made from raw milk, it is perfect to serve as an appetiser accompanied by PDO Cangas young red wine, to finish a good meal accompanied by an Asturias ice cider, or as an ingredient in a cheese sauce or any other recipe in which you want to bring out the personality and character of a good cheese such as PDO Cabrales.
Selección PDO Cabrales Cheese is creamy with abundant blue pigmentations and an intense and even sharp, flavour as would be expected of a good blue cheese. With a reddish or brown rind, this cheese is also very intense and has a long aroma that helps round off the aftertaste.
It is recommended to bring the product to room temperature about fifteen or twenty minutes before serving to guarantee all the intensity of its flavour. Store in the refrigerator.
