The red, cone-shape Afuega’l Pitu PDO cow’s cheese is made with pasteurised cow’s milk in thirteen municipalities in the central area of Asturias, all covered by the Afuega’l Pitu Protected Designation of Origin regulation.
Red Afuega’l is one of the most unique Spanish artisan cheeses that has become one of the most renowned Spanish cheeses made with pasteurised cow’s milk.
Its characteristic red colour is the result of the use of paprika as an additional ingredient in the lactic fermentation, as well as salt and rennet of animal origin, together with pasteurised cow’s milk from cows raised in semi-freedom, which results in a cheese of renowned quality.
To enjoy all the intensity of its flavour it is recommended to remove it from the refrigerator 30 minutes before serving, so that it reaches room temperature.
The cheese tastes best if it is served at the correct temperature. Therefore, the cheese must be kept in the lower area of the refrigerator in protective packaging and removed for around fifteen minutes before serving.

Afuega’l Pitu PDO red cheese is vacuum packaged in pieces of approximately 300 g in a cone-shape mould.
The cut of the cheese is grainy and with a characteristic pulp that progresses along with maturity.
This Afuega’l Pitu PDO has fresh and acidic aromas on the nose from the use of dairy curd in the manufacturing process. It also has smoky and sharp nuances from the use of paprika, which in addition to the complexity on the mouth, gives it the characteristic red colouring.
