Raw cow’s milk cheese with the Casín Cheese Protected Designation of Origin and made in the Asturias towns of Caso, Sobrescobio and Piloña located in the south-eastern part of Asturias.
Spanish Casín cheese is a small size, completely handmade using milk from Casín cows, also known as the Asturias mountain cow, a native breed of Asturias cows.
The best way to consume cheese is at room temperature; therefore, it is recommended to remove the piece of cheese from the refrigerator about thirty minutes before serving.
Store in the refrigerator.
PRODUCT PRESENTATION
The DOP Casín cheese made from raw cow’s milk is vacuum packed in 200 g pieces.
The raw cow’s milk cheese presented in small format has no rind and can therefore be consumed almost entirely. It has a compact cut, firm texture and a yellow colour. It is a very aromatic Asturias cheese with intense spicy notes.
In the same way that that its character is revealed in the olfactory tasting, on the palate this Asturias cheese from raw cow’s milk is tough, fatty, persistent and spicy, therefore often enjoyed in small portions. Ideal for lovers of strong cheeses with great flavour intensity, Casín PDO cheese is a unique product.
This cheese is pressed three times and the final moulding is completely manual, which gives it its distinctive visual feature: the oblate hemisphere. Furthermore, pressure is applied on its base with a wooden mould, which impresses an ornamental relief on the base. The motif decoration is unique for each cheese factory and once served to help distinguish the origin of the Casín cheese, one of the most interesting raw cow’s milk cheeses of Asturias. Casín PDO cheese is one of the oldest cheeses of Asturias, together with Cabrales PDO cheese.
