El Queso Gamoneu DOP es un queso asturiano que dependiendo de la época puede ser elaborado con leche de vaca, de vaca y cabra o de las tres leches, a las que se añade cuajo natural, lo que hace de este queso un producto totalmente artesano.
El salado del queso se hace frotando las caras del queso con sal común, para después orear y acortezar tres días. A continuación se procede al ahumado del queso Gamoneu en las cabañas de los pastores con fuego de leña, proceso que dura entre diez y veinte días.
Finalmente, el queso Gamoneu DOP se madura en cuevas naturales en un período que oscila entre dos y cinco meses dependiendo de la humedad de la zona de producción (Onís o Cangas).
La corteza exterior del queso es natural, y la maduración en la cueva permite conseguir un color característico, así como un aroma fuerte e intenso a humo.
El Gamoneu (o por algunos llamado queso Gamonedo) es un queso azul que no puede faltar en la nevera de los amantes de este producto.
Al igual que con todos los quesos que ofrecemos en productosdeasturias.com, recomendamos sacar el queso Gamoneu del frigorífico unos 30 min antes de su consumo para garantizar la intensidad de su aroma y sabor.
