Shoulder ham is a product that can be served as a main ingredient of a dish, as a charcuterie cut or to enhance cooking flavours.
In the best-known recipes of Asturias cuisine, shoulder ham is the star ingredient; and so it is found in bean, chickpea, lentil, etc. dishes. It is also very common to serve roasted, boiled or braised. Accompanied by 'cachelos' (sliced boiled potato) and seasoned with a touch of sweet or spicy paprika. For use in stews, it is recommended to desalt it lightly by soaking it in water the day before cooking. Álvarez pork shoulder ham offers an exquisite flavour, superior quality and unrivalled texture.
