It must be soaked at least 24 hours before cooking. Cooking this Spanish bean dish correctly can take up to five hours, breaking the boil at least every two hours.
To avoid breaking the beans it is recommended not to use cooking utensils but to slosh the mixture gently using the handles on the pot.Keep in a cool, dry and dark place.
