This marinated Vidiago Collera cheese is made with pasteurised cow's milk and matured for at least 90 days in a blend of extra virgin olive oil and paprika. During this time, the cheese is impregnated with the flavours of excellent extra virgin olive oil and the depth and toasted touches that the paprika adds. A combination of a cured cow's milk cheese with extra quality ingredients that make each bite a flavour experience.
The secret to serving the perfect cheese is to temper it a few minutes before serving. For this reason, it is recommended that the seasoned Vidiago Collera cheese be left to breathe with sufficient time in advance (about 25-30 minutes) so that the cheese, the oil and the paprika oxidise in contact with the air and enhance the intensity of their flavours.
Marinated Vidiago Collera cheese must be kept refrigerated and, once opened, it must be stored together with as much of the exquisite mixture of extra virgin olive oil and paprika as possible.
