This authentic raw cow’s milk cheese is a new-generation high-quality Asturias cheese, whose name comes from a farm in the town of Priede, in the municipality of Piloña, where the dairy cows that produce the milk used to make it graze.

La Xerra cow’s milk cheese is a product of great quality, exquisite flavour and intense due to its curing time and being manufactured with raw milk. Its texture is firm and somewhat buttery, almost without holes and it has a natural crust.
It is manufactured by the artisan dairy company Ca Llechi, which produces cheeses with milk from its own herd, which grazes and lives in freedom in the Council of Piloña, in the eastern part of Asturias.
It pairs exquisitely with fruits and nuts, accompanied by a good, crispy artisan bread. It is also exceptional accompanied by a white Cangas wine. It can also be used in cooking, such as grated cheese on top of pastas or pizzas, or added to risottos or rice stews.
To enjoy all the flavour and all the aroma of the cheese, it should be consumed at room temperature; it is therefore recommended to remove it from the refrigerator about 20-30 minutes before serving.
