Black sausage is a traditional Spanish preserved sausage made from the fattiest parts of the pork and completed with bacon and other ingredients that lend a unique flavour and intensity. It is stuffed into natural casings and then cured to the optimum point for use in typical stews of Asturias and Spanish cuisine.
