Compango (charcuterie cuts) is the popular word used in Asturias for the cured meats typically used in traditional recipes such as the Asturias bean stew or the Asturias casserole.
The Asturias compango, in fact, represents much more; it is an expression of the know-how drawn from very old traditions of the villages and ‘brañas’ (high-mountain grazing pastures) of Asturias that are no longer in use today. The product preserves the essence of the days when families came together during the San Martín Fiestas, where the "matachín" (the men who slaughtered the animals) and the "mondongueras" (the women who processed the meat) of the town worked in a frenzy way to produce the supply of meat that was required for the families for the rest of the year.
While the "matachíns" worked on slaughtering and butchering the animals, the "mondongueras" prepared the ingredients for making chorizo sausages and black sausages. And these were just some of the most important tasks that were generally entrusted to the older people of the town, who maintained generations of know-how and who patiently taught the younger generations of the family.
The organic Bienastur Asturias charcuterie cuts include organic sausages handmade in Asturias using the traditional recipe that the "mondongueras" used.
