Gamoneu PDO Cheese is an Asturias cheese that may be made from cow's milk, cow's and goat's milk or a blend of three milks, depending on the season, to which natural rennet is added, in a process entirely based on traditional artisan techniques.
The cheese is salted by rubbing the sides of it with common salt then aerating and allowing it to form a rind for three days. Next, the Gamoneu cheese is smoked in shepherds' huts over a wood fire, a process that takes between ten and twenty days.
Finally, Gamoneu PDO cheese matures in natural caves over two to five months depending on the humidity of the production area (Onís or Cangas).
The outer rind of the cheese is natural and the cave maturing achieves a characteristic colour and a strong and intense smoked aroma.
Gamoneu (or also known as Gamonedo) cheese is a blue cheese that is an essential item in the fridges of those who love an especially flavoursome cheese.
